A Winter Break Baking Journal and Banana Date Oat Bars

Hey Everyone!

Welcome to the first blog post of 2021. We haven't quite yet been able to all meet together. Though Meheq Bawa a Grade 11 SMUS Eats Member has created for you some inspiration to keep creating in the kitchen.

For some baking inspiration, here are a few of my favorite healthy baking treats. With a recipe attached!

BANANA DATE OAT BARS:

(vegan and gluten-free)


Dry Ingredients:

- 1 cup rolled oats (90 g)

- 1 cup oat flour (120 g)

- 1 tsp cinnamon

- 1 tsp baking powder

- ¼ tsp salt

Wet Ingredients:

- 1 ripe bananas, chopped or mashed

- ½ cup Soaked blended dates

- ½ cup of plant milk

- 2 tbsp almond butter

Add-ins: (optional)

- ⅓ cup walnuts, chopped (40 g)

- 5 dates, chopped

- ¼ cup coconut flakes (20 g)

- 2 tbsp chia seeds


Instructions

  1. Preheat oven to 350 degrees

  2. Mix together all dry ingredients

  3. In a separate bowl combine wet ingredients

  4. Pour wet mixture into dry mixture and combine well

  5. Add any add-ins

  6. Line baking dish with parchment paper

  7. Pour mixture into the dish - bars should be 1-1.5 inch thick

  8. Add any toppings and press down

  9. Bake for 18-20min at 350 degrees until firm + brown
